Family-friendly garlic steak: Simple and flavorful.
Ingredients:
  • 637.50 gm vegetable liquid stock
  • 266.00 gm white long-grain rice, rinsed
  • olive oil cooking spray
  • 1 bunch asparagus, trimmed
  • 1 yellow capsicum, cut into 1cm-thick strips
  • 250g cherry tomatoes
  • 82.50 ml flat-leaf parsley leaves, chopped
  • 1/2 lemon, juiced
  • 4 beef round steaks (see note)
  • 10.00 gm garlic steak seasoning
  • lemon wedges, to serve
Instructions:
  • In a saucepan, bring the stock to a boil over high heat. Stir in the rice and cover. Let it simmer on low heat for 15 minutes. Remove from heat and let it stand covered for an additional 10 minutes. Fluff the rice with a fork to separate the grains before serving.
  • Preheat a barbecue plate on medium-high heat and lightly grease it. Lightly spray oil on asparagus, capsicum, and tomatoes, then grill for 2 to 3 minutes until tender, turning occasionally. Transfer vegetables to a cutting board. Cut asparagus spears diagonally into thirds. In a large bowl, combine the asparagus, capsicum, tomatoes, rice, parsley, and 1 1/2 tablespoons of lemon juice. Season with salt and pepper, then toss until thoroughly mixed.
  • Preheat a barbecue grill plate on high heat. Coat the steak with oil on both sides. Rub seasoning onto both sides of the steak and cook for 30 seconds per side for medium doneness. Serve with warm rice salad and lemon wedges.
