Garlic and rosemary T-bone steaks with warm potato salad

Elevate family dinner with flavorful garlic and rosemary T-bone steaks, paired with comforting warm potato salad.
Ingredients:
  • 80ml olive oil
  • 20.00 ml finely chopped rosemary
  • 2 garlic cloves, finely chopped
  • 1 lemon, zested, juiced
  • 1.2kg beef steak
  • 700g chat potatoes, halved
  • 2 red capsicum, seeded, cut into thick strips
  • 120g olive
  • 100g rocket
Instructions:
  • Preheat the oven to 200C. In a small jug, mix oil, rosemary, garlic, lemon zest, and 2 teaspoons of lemon juice. Season with salt and pepper. Put T-bone steaks in a large glass or ceramic dish. Pour half the marinade over the steaks, ensuring they are evenly coated. Let it sit for a while.
  • Spread the potatoes and capsicum on a baking tray lined with parchment paper. Pour the remaining marinade over them. Roast in the oven for 30 minutes. Then, sprinkle olives over the vegetables and roast for an additional 10 minutes, or until the potatoes are golden and fully cooked.
  • Preheat a chargrill or BBQ plate over medium-high heat. Grill steaks for 3 minutes on each side for medium-rare perfection. Let the steaks rest for 5 minutes before serving.
  • Transfer the potato mixture to a bowl, then mix in the rocket until well combined. Serve the steaks alongside the warm potato salad.
