Gennaro's classic spaghetti carbonara

Simple ingredients make a perfect carbonara that is truly beautiful when done right.
Ingredients:
  • 3 large free-range egg yolks
  • 40 g Parmesan cheese plus extra to serve
  • 1 x 150 g piece of higher-welfare pancetta
  • 200 g dried spaghetti
  • 1 clove of garlic
Instructions:
  • In a bowl, combine egg yolks with grated Parmesan and pepper, mix well and set aside. Trim skin off pancetta, chop the meat. Cook spaghetti until al dente. Rub pancetta skin on frying pan or use oil, add crushed garlic, let it flavor the fat. Stir in pancetta, cook until crisp. Remove garlic, drain spaghetti, add to pan, toss to absorb flavors. Remove from heat, add a splash of cooking water, season with pepper, mix in egg mixture gently. Add more water if needed until glossy. Serve with Parmesan and pepper.
