German Anise Christmas Cookies (Springerle)

Classic holiday cookies, irresistibly crispy for perfect dunking.
Ingredients:
  • 4.5 cups all-purpose flour
  • 1 pound confectioners' sugar
  • 1 tablespoon lemon zest
  • 1 tablespoon anise seed, ground
  • 1 tablespoon anise seed, crushed
Instructions:
  • Combine the flour and baking powder by sifting them together, then set aside. In a large bowl, beat the eggs and sugar until thick and light. Mix in the lemon zest and ground anise. Fold in the flour mixture until well combined. Cover and refrigerate the dough for approximately an hour.
  • Roll the dough out to 1/2 inch thickness on a dusted surface. Use a springerle rolling pin if available or cut the dough into desired shapes. Arrange cookies 1/2 inch apart on baking sheets, sprinkle with anise seed, and let sit uncovered overnight.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), then bake the cookies for 25-30 minutes until golden and delicious.
