Indulgent brownies with a decadent coconut and pecan topping inspired by German chocolate cake.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter
  • 4 (1 ounce) squares sweet baking chocolate (such as Baker's German's Sweet Chocolate®), broken into pieces
  • 0.5 cup white sugar
  • 2 large eggs, beaten
  • 0.5 cup brown sugar
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons corn syrup
  • 2 tablespoons milk
  • 1 cup flaked coconut
  • 0.5 cup finely chopped pecans
Instructions:
  • Preheat the oven to 325°F (165°C) and butter an 8- or 9-inch square glass baking pan.
  • Combine the flour, baking powder, and salt in a mixing bowl.
  • In a saucepan, gently melt butter over low heat. Add chocolate and stir until smooth. Take off the heat and let cool for at least 10 minutes.
  • In a bowl, mix together the cooled chocolate mixture, sugar, and vanilla extract. Add the eggs and mix thoroughly. Fold in the flour mixture until fully incorporated. Spread the batter evenly into the prepared baking pan.
  • Bake in the preheated oven for 20-30 minutes until a clean knife comes out from the center, then switch the oven to broil.
  • In a bowl, mix together brown sugar, melted butter, corn syrup, and milk for the topping. Stir in coconut and pecans. Spread the mixture evenly over the warm brownies.
  • Place under the broiler until the topping is bubbling, for 1 to 2 minutes. Let it cool for 1 hour before slicing and serving.
