Indulge in a decadent German chocolate upside-down cake with a luscious baked coconut and nut topping - no frosting required!
Ingredients:
  • 1 cup chopped pecans
  • 1/2 cup packed brown sugar
  • 1/2 cup flaked coconut
  • 1/4 cup butter or margarine, melted
  • 2 oz sweet baking chocolate
  • 1/4 cup water
  • 1 cup granulated sugar
  • 1/2 cup butter or margarine, softened
  • 2 eggs
  • 1 1/4 cups Gold Medal™ self-rising flour
  • 1/2 cup milk
Instructions:
  • Preheat the oven to 350°F. Combine topping ingredients in an ungreased 9-inch round cake pan and spread evenly.
  • Place chocolate and 1/4 cup water in a microwave-safe bowl. Microwave on High for 1-1.5 minutes until chocolate is melted. Stir well to combine.
  • In a medium bowl, cream together granulated sugar and 1/2 cup of butter until fluffy. Mix in vanilla and eggs until well combined. Gradually add 3/4 cup of flour and milk on low speed. Then, mix in the remaining 1/2 cup of flour thoroughly. Fold in the chocolate mixture until well incorporated. Pour batter over the topping in the pan.
  • Bake for 40 to 45 minutes until a toothpick inserted in the center comes out clean. Loosen the cake by running a knife around the edge. Flip the cake onto a serving plate while it's still warm. Serve warm or cool.
