Indulge in a sweet, fluffy German New Year's pretzel for good luck, paired perfectly with butter.
Ingredients:
  • 6.25 teaspoons active dry yeast
  • 1 cup lukewarm milk, divided
  • 4.5 tablespoons white sugar
  • 2.25 cups all-purpose flour, sifted, or more as needed
  • 4.5 tablespoons melted butter
  • 1 teaspoon lemon zest
  • 1 pinch salt
  • 1 egg yolk
  • 1 teaspoon white sugar, or as needed
Instructions:
  • In a bowl, combine yeast and 1/2 cup of milk, then stir in 4 1/2 tablespoons of sugar. Allow the mixture to sit until the yeast softens and a creamy foam forms, approximately 5 minutes.
  • Combine the yeast mixture and 2 1/4 cups of flour in a bowl until a dry and clumpy dough forms. Let the dough rise for 15 minutes. Mix in the remaining 1/2 cup of milk, butter, egg, lemon zest, and salt until well combined.
  • Work the dough until it's stretchy, adding extra flour as necessary. Cover the bowl with a clean damp towel or plastic wrap, and let the dough rise in a warm spot until it doubles in size, around 1 hour.
  • Preheat your oven to a toasty 390 degrees F (199 degrees C), and generously grease a baking sheet.
  • Carefully shape the dough into a long rope on the baking sheet, then twist it into a classic pretzel shape. Cover the pretzel with a clean towel or plastic wrap and let it rise for an additional 15 minutes.
  • Coat dough with a luscious egg yolk glaze and gently dust with 1 teaspoon of sugar.
  • Bake in the preheated oven for 25-30 minutes or until golden brown.
