German Potato Salad: Potatoes, bacon, onions, herbs, and mustard vinaigrette. Versatile dish for any BBQ!
Ingredients:
  • 1 1/2 pounds (about 8) small red potatoes
  • 3 slices (about 4 ounces) thick-cut bacon, diced
  • 2 medium (3/4 pound) red onions, diced
  • 2 tablespoons white wine vinegar
  • 1/3 cup low sodium vegetable or chicken broth (store-bought or homemade)
  • 1 tablespoon prepared yellow mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup chopped fresh herbs (I like a mixture of chives and parsley)
Instructions:
  • Steam the potatoes by filling a pot with an inch or two of water and placing a steamer basket inside. Bring to a simmer over medium-high heat and add the rinsed potatoes to the basket. Cover and steam for 20 minutes. Check for doneness by piercing a potato with a knife; steam a few more minutes if needed. Remove the steamer basket from the pot and let the potatoes cool for 20 minutes before using.
  • While the potatoes cool, prepare the bacon dressing: Cook bacon in a large skillet over medium heat until it starts to release its fat, around 5 minutes (cook for 8 minutes for extra crispiness). Add onions and cook for another 5 minutes until soft and translucent. Pour in vinegar and let it reduce for about 2 minutes. Mix in vegetable broth, mustard, salt, and pepper. Remove from heat. (If potatoes are not ready, keep warm and reheat before combining with potatoes in the next step.)
  • Peel the potatoes using your fingers or a paring knife, then slice them 1/4-inch thick. You can keep the skins on for a more rustic potato salad.
  • Combine potatoes and herbs with warm dressing: Toss potatoes and chopped herbs into the skillet with the vinaigrette. Stir gently until potatoes are evenly coated with herbs, onions, and bacon.
