German potato salad with tangy bacon vinaigrette, versatile for any gathering.
Ingredients:
  • 4 medium potatoes, cut into bite-sized pieces
  • 4 slices bacon
  • 2 tablespoons white sugar
  • 0.33333334326744 cup water
  • 0.25 cup white wine vinegar
  • 0.5 cup chopped green onions
Instructions:
  • 1. Bring a pot of generously salted water to a rolling boil. Cook potatoes until easily pierced with a fork, about 8 to 15 minutes. Drain well.
  • Cook the bacon in a large, deep skillet over medium-high heat until browned and crispy, about 8 to 10 minutes. Remove the bacon to a paper towel-lined plate, keeping the drippings in the skillet. Chop or crumble the bacon once it has cooled slightly.
  • Combine the sugar and flour with the drippings in the skillet, then pour in the water and vinegar. Cook over medium heat, using a wooden spoon to scrape off any browned bits from the bottom, until the dressing thickens, for about 3 to 5 minutes. Remove from heat.
  • Incorporate potatoes, crumbled bacon, and green onions into the skillet, ensuring they are well coated. Season with salt and pepper to taste.
