Giant Anzac biscuits

Indulge in oversized, chewy Anzac biscuits for an irresistible treat!
Ingredients:
  • 150.00 gm rolled oats
  • 127.50 gm desiccated coconut
  • 375.00 ml plain flour
  • 180.00 gm brown sugar
  • 185g butter, chopped
  • 83.75 gm golden syrup
  • 3.75 gm bicarbonate of soda
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and line 2 baking trays with baking paper.
  • In a large bowl, mix together oats, coconut, flour, and sugar. Create a well in the center. In a saucepan over medium heat, melt butter with syrup and 1/4 cup of cold water, stirring for 4 to 5 minutes until melted. Remove from heat and stir in bicarbonate of soda. Combine butter mixture with the oat mixture.
  • Take 1/4 cup of mixture and shape it into 12 balls. Put 2 balls on each tray, 10cm apart. Flatten each ball into an 8cm round that is 1cm thick using the palm of your hand. Bake for 17-18 minutes until golden. Let them sit on the tray for 5 minutes, then move to a wire rack to cool. Repeat with the rest of the mixture. Serve and enjoy.
