Giant Christmas sausage roll recipe

Keep this delicious giant sausage roll recipe handy for year-round Aussie party perfection.
Ingredients:
  • 500g turkey mince
  • 500g pear-and-onion pork sausages, casings removed
  • 90g (1/3 cup) cranberry sauce, plus extra, to serve
  • 45g (1/2 cup) dried (packaged) breadcrumbs
  • 55g (1/3 cup) pistachios, coarsely chopped
  • 50g (1/3 cup) dried cranberries
  • 40.00 ml chopped fresh sage leaves
  • 20.00 ml fresh lemon thyme leaves
  • 3 eggs
  • 3 sheets frozen puff pastry, just thawed
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced and line a large baking tray with baking paper.
  • Combine turkey mince, sausage mince, cranberry sauce, breadcrumbs, pistachios, cranberries, garlic, sage, thyme, and 2 eggs in a large bowl. Season generously and mix thoroughly.
  • Lay 2 pastry sheets on a clean surface, slightly overlapping by 3cm to create a large rectangle. Firmly press to seal. Spread the sausage mixture along one long side of the pastry. Roll up the pastry tightly to cover the filling. Place the roll on the tray with the seam side down. Whisk the remaining egg and brush it over the pastry.
  • Cut star shapes of various sizes from the leftover pastry sheet using cookie cutters. Place them on top of the sausage roll. Brush the stars with the remaining egg wash. Bake for 45-50 minutes until the filling is cooked and the pastry is golden and puffed. Serve with extra cranberry sauce on the side.
