Giant double chocolate chip cookies

Indulgent, ultra-rich chocolate cookies that will leave you craving more.
Ingredients:
  • 240g unsalted butter, at room temperature
  • 265g (1 1/4 cups) caster sugar
  • 100g (1/2 cup, firmly packed) brown sugar
  • 340g (2 1/4 cups) plain flour
  • 90g (3/4 cup) cocoa powder
  • 40.00 ml corn flour
  • 2.40 gm sea salt
  • 3.13 gm bicarbonate of soda
  • 200g dark chocolate, coarsely chopped
  • 8.80 gm Queen Concentrated Vanilla Extract
Instructions:
  • Preheat your oven to 190C (170C fan forced) and prepare 2 baking trays by lining them with baking paper.
  • In a large bowl, mix butter, caster sugar, brown sugar, and Queen Concentrated Vanilla Extract using electric beaters for 3-4 minutes until pale and creamy. Add eggs one at a time, beating well after each addition. Continue beating for another 2 minutes until well combined.
  • Sift the flour, cocoa powder, corn flour, salt, and bicarbonate of soda into a large bowl, then add them to the butter mixture. Gently mix until just combined, then carefully fold in the chocolate.
  • Shape the dough into fourteen 95g balls and place them on the baking trays. Bake one tray at a time for 12-14 minutes until lightly golden. Allow the cookies to cool slightly on the tray, then transfer them to a wire rack to cool completely. Repeat with the second tray.
