Elevating the party favorite fairy bread into a spectacular giant cake!
Ingredients:
  • 250g unsalted butter, softened
  • 322.50 gm caster sugar
  • 8.80 gm vanilla extract
  • 4 eggs
  • 450.00 gm self-raising flour
  • 257.50 gm milk
  • 40.00 ml confetti sprinkles
  • 125g unsalted butter, softened
  • 225.00 gm icing sugar mixture
  • 20.60 gm milk
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced) and grease a 5cm-deep, 21cm x 24cm square cake pan. Line the base with baking paper. Create a 90cm strip of foil and a 90cm strip of baking paper by folding them accordingly. Line the pan with the foil strip wrapped in baking paper, overlapping along one side. Form three foil strips to create the curved side of the bread slice by folding tightly. Position them in the pan as shown in the picture.
  • With an electric mixer, whip together butter, caster sugar, and vanilla until light and fluffy. Gradually add eggs, one at a time, mixing well after each addition.
  • Combine half of the flour and half of the milk in the mixing bowl. Beat on low speed until just combined. Then, add the remaining flour and milk and beat until fully incorporated.
  • Pour mixture into the pan, ensuring a smooth surface. Bake for 1 1/2 hours or until a skewer inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack lined with baking paper to cool completely.
  • Prepare the Buttercream. Using an electric mixer, whip butter for 5 minutes until light and airy. Slowly incorporate the icing sugar mixture, whisking continuously until fully combined. Blend in the milk.
  • Put the cake on a chopping board. Trim the top of the cake with a sharp knife to level it by cutting off 5mm. Slice the cake in half horizontally. Place one cake slice on a serving plate and spread half of the buttercream on it. Place the other cake slice on top to make a sandwich. Spread the rest of the buttercream on the top of the cake according to the picture. Sprinkle confetti sprinkles on top. Serve and enjoy.
