Giant potato rosti with apple slaw recipe

Quick and delicious vegetarian potato rosti with broccoli, apple, and kale slaw, packed with a generous portion of vegetables.
Ingredients:
  • 800g white potatoes, coarsely grated
  • 1 egg, lightly beaten
  • 80g butter, melted
  • 2 tsp caraway seeds
  • 350g Broccoslaw Kit (see note)
  • 2 granny smith apples, cored, cut into thin wedges
  • 2 green onions, thinly sliced diagonally
  • Lemon wedges, to serve
Instructions:
  • Combine potato, egg, butter, caraway, and half of the slaw kit in a large bowl. Season with salt and pepper, then mix well. Keep dressing and cranberries aside for later.
  • Preheat a greased non-stick frying pan over medium heat. Spread the potato mixture evenly in the pan and press down to compress. Cook for 15 minutes until the base is golden brown and crisp. Carefully flip the rosti onto a board, then slide it back into the pan. Cover and cook for an additional 10 minutes until cooked through and crispy. Transfer to a serving board.
  • In a large bowl, mix the remaining slaw kit with the reserved dressing. Add the apple and onion, season with salt and pepper, and toss everything together.
  • Top the crispy and golden rosti with a generous portion of the vibrant apple slaw and a sprinkle of the sweet cranberries. Serve the remaining apple slaw on the side alongside some fresh lemon wedges for an extra burst of flavor.
