Giant air fryer potato rosti recipe

Crispy Swiss-style potato fritters made healthier in an air fryer, topped with a variety of delicious options to elevate this classic dish.
Ingredients:
  • 750g washed desiree potatoes, peeled, coarsely grated
  • 1.20 gm sea salt
  • 200g smoked salmon
  • 100g sour cream
  • 20.00 ml finely chopped chives
  • 35g (1/3 cup) grated cheddar OR Mexican cheese blend
  • 1/2 avocado, mashed
  • 30g chargrilled red capsicum, finely diced
  • 40.00 ml drained black beans
  • 37.60 gm sour cream
  • Grated manchego cheese, to serve (optional)
  • Lime wedges, to serve
  • 50g haloumi, grated
  • 50g mozzarella, grated
  • 25g parmesan, grated
  • 5-6 rashers streaky bacon, rind removed
  • 1/2 tub French onion dip
  • 1 green shallot, finely sliced
Instructions:
  • In a bowl, mix together potato and salt. Coat an air fryer basket with oil. Layer the grated potato in the basket, ensuring it reaches the edges. Air fry at 200C for 25-30 minutes. Let it cool in the basket for 5 minutes before flipping onto a serving plate.
  • For topping 1, generously slather the potato rosti base with velvety sour cream, layer on delicate smoked salmon, and sprinkle a handful of fresh chives for a final touch.
  • Sprinkle cheese over the potato rosti base and melt under a hot oven grill for about 5 minutes. Add a generous spoonful of mashed avocado, capsicum, black beans, and a dollop of sour cream. Optional: sprinkle with manchego. Serve with fresh lime wedges.
  • Sprinkle the cheeses over the potato rosti base and broil in a hot oven for 5 minutes until melted. Meanwhile, fry the eggs and bacon and place on top of the melted cheese.
  • Spread the French onion dip over the potato rosti base and sprinkle with shallot for topping 4.
