Indulge in these oversized cookies for the ultimate treat!
Ingredients:
  • 125g butter, softened
  • 4.40 gm vanilla essence
  • 59.40 gm brown sugar
  • 70.95 gm caster sugar
  • 1 egg
  • 187.50 gm self-raising flour
  • 250.00 ml cornflakes
  • 190.00 gm choc bits (see note)
Instructions:
  • Preheat your oven to 180°C. Prepare 2 baking trays by greasing them and lining with baking paper. In a bowl, use an electric hand mixer to blend butter, vanilla, brown sugar, caster sugar, and egg until smooth and thoroughly combined.
  • Sprinkle flour over the butter mixture and gently fold it in using a large metal spoon until just combined. Stir in the cornflakes and chocolate bits until evenly distributed.
  • Roll the mixture into 1/4 cup-sized balls and space them 6cm apart on the baking trays.
  • Gently press down on cookies with moistened fingers. Bake for 8 minutes. Rotate trays in the oven and bake for an additional 7 to 8 minutes until pale gold. Rest cookies on trays for 3 minutes, then move to a wire rack to cool. Enjoy your delicious cookies!
