Elevate boxed cake mix for a crowd-pleasing dessert in no time!
Ingredients:
  • 310g madeira packet cake mix
  • 2 eggs
  • 193.13 gm milk
  • 5.00 gm ground ginger
  • 1.25 gm ground cinnamon
  • 1/4 tsp ground cloves
  • 24.00 gm brown sugar
  • 1 small packham pear, cored, thinly sliced
  • Double cream, to serve
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and generously grease a 6cm-deep, 12cm x 20.5cm loaf pan. Line the base and sides with baking paper, leaving a 2cm overhang at the long ends.
  • In a large bowl, combine cake mix with eggs, milk, ginger, cinnamon, and cloves. Use an electric mixer on low speed until just combined, about 30 seconds. Increase speed to medium and beat for 4 minutes until mixture is pale and creamy.
  • Sprinkle sugar on the base of a prepared pan. Arrange slightly overlapping pears on top. Spoon cake mixture over pears and smooth the top. Bake for 50 minutes, then check with a skewer for doneness. Let it cool in the pan for 5 minutes, then turn it out onto a plate and serve with cream.
