Indulge in a quick and delightful dessert featuring zesty ginger cake, sweet pear, and creamy vanilla custard.
Ingredients:
  • 25g butter
  • 45.00 gm brown sugar
  • 63.13 gm thickened cream
  • 410g can pear slices in juice, drained
  • 1/2 x 515g ginger loaf, cut into 3cm squares
  • 240.00 gm extra-thick vanilla custard
  • 40.00 ml roasted coconut chips
Instructions:
  • In a small frying pan over medium heat, combine butter, sugar, and cream. Stir and cook for 2 to 3 minutes until smooth and melted. Bring to a boil and simmer for 2 more minutes until slightly thickened. Add pears and gently coat them with the mixture. Boil for an additional 2 minutes until pears are heated through.
  • Layer the ginger loaf, custard, and caramel pear mixture twice into four 1 1/2-cup-capacity glasses. Finish by sprinkling with coconut before serving.
