Apple and Pear Soup

Vegetarian soup with apples, pears, and ginger - perfect for cozy fall days!
Ingredients:
  • 1 tablespoon reduced-fat margarine
  • 3 tart apples - peeled, cored, and chopped
  • 3 pears - peeled, cored, and chopped
  • 5 cups vegetable broth
  • 0.5 teaspoon rubbed sage
  • 1 bay leaf
  • 1.5 teaspoons pureed fresh ginger
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a large saucepan over medium heat, melt the margarine. Saute the apples and pears in the margarine for 5 minutes. Add vegetable broth, sage, pepper, and bay leaf. Bring to a boil, then simmer covered on low for 20 minutes until fruits are tender. Let it cool for 5 minutes before serving.
  • Transfer one-third of the soup to a blender, making sure not to fill it more than halfway. Secure the lid with a towel and blend in quick pulses to start, then puree until smooth. Repeat with remaining soup and pour into a clean pot. Alternatively, use a stick blender directly in the saucepan. Reheat the pureed soup in the saucepan over medium heat. Serve garnished with parsley.
