Ginger and soy asparagus

Irresistibly crisp asparagus side dish.
Ingredients:
  • 1 tsp sesame oil
  • 18.20 gm peanut oil
  • 82.50 ml raw cashews
  • 3cm piece fresh ginger, peeled, cut into thin matchsticks
  • 1 garlic clove, finely chopped
  • 2 bunches asparagus, trimmed
  • 150g snow peas, trimmed
Instructions:
  • Mix together the soy sauce and sesame oil in a small bowl.
  • Place a wok over medium heat and add 1/2 teaspoon of peanut oil, swirling to coat. Add cashews and stir-fry for 1 to 2 minutes until toasted. Remove cashews using a slotted spoon and transfer to a plate lined with paper towel.
  • Pour the rest of the peanut oil into the wok and swirl it around to coat the ingredients. Drop in the ginger and garlic, stir-fry for 1 minute until fragrant. Toss in the asparagus and snow peas, stir-fry for 2 minutes until bright green and tender. Add the soy sauce mixture, stir-fry for 1 minute until heated through. Finish it off by sprinkling with cashews before serving.
