Ginger chicken meatballs: Bite-sized bursts of flavor, ideal for any party!
Ingredients:
  • 400g chicken mince
  • 200.00 gm cooked white rice
  • 250.00 ml fresh breadcrumbs
  • 2 garlic cloves, crushed
  • 125.00 ml finely chopped fresh coriander leaves
  • 2 green onions, thinly sliced
  • 3cm piece fresh ginger, finely grated
  • 137.50 gm sweet chilli sauce
  • 36.40 gm peanut oil
  • Coriander leaves, to serve
  • Salt, to season
Instructions:
  • In a bowl, mix together mince, egg, rice, breadcrumbs, garlic, coriander, onion, ginger, and 2 tablespoons of sweet chilli sauce. Season with salt and pepper, then shape the mixture into balls using level tablespoons. Transfer the balls onto a plate.
  • In a large frying pan over medium-high heat, sear meatballs for 5 to 7 minutes until golden brown and fully cooked. Drizzle with the remaining sweet chilli sauce and garnish with fresh coriander. Enjoy!
