Versatile chicken meatballs perfect for lettuce wraps, soup, or stir-fry. Stay tender with special cooking method.
Ingredients:
  • 1 lb ground chicken
  • 4 cloves minced garlic
  • 1 (1-inch) piece fresh ginger, peeled and minced
  • 1/2 onion, finely minced
  • 1 tablespoon light soy sauce
  • 1 tablespoon sake
  • 1/4 cup panko breadcrumbs
  • 1/4 cup sliced green onions
Instructions:
  • In a bowl, mix ground chicken, garlic, ginger, onion, 1 tablespoon light soy sauce, sake, egg, panko, and green onions. Shape the mixture into 1-inch meatballs and place them on a tray lined with parchment paper.
  • In a bowl, combine 2 teaspoons each of light soy sauce, dark soy sauce, honey, oyster sauce, water, and cornstarch, then whisk together to make the sauce; set aside.
  • Bring a large pot of water to a vigorous boil. Gently add chicken meatballs using a spider or slotted spoon, ensuring not to overcrowd the pot. Cook until meatballs rise to the surface, about 3 to 4 minutes. Remove meatballs using a spider or slotted spoon.
  • In a sizzling wok, sear chicken meatballs in fragrant sesame oil for about 3 minutes until golden. Mix in sauce ingredients and vibrant vegetables, stir until the veggies are tender yet still crisp, for approximately 5 minutes.
  • Divide a generous portion of fragrant jasmine rice in each bowl or plate. Top with savory cooked vegetables and flavorful chicken meatballs. Serve promptly for ultimate enjoyment.
