Garlic-Ginger Chicken with Fettuccine

Savor a quick and delicious Italian chicken pasta dinner in just 30 minutes.
Ingredients:
  • 8 oz uncooked fettuccine
  • 4 boneless skinless chicken breasts (4 oz each)
  • 3 cloves garlic, finely chopped
  • 1 tablespoon grated gingerroot
  • 1/2 teaspoon salt
  • 2 tablespoons dry sherry or apple juice
  • 1 tablespoon apple jelly
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • Prepare and drain fettuccine according to package instructions.
  • Spray a 10-inch skillet with cooking spray and heat over medium-high heat. Brown the chicken for about 5 minutes, turning once. Add garlic, gingerroot, salt, sherry, and jelly. Glaze the chicken with the sauce, reduce heat, cover, then simmer for about 7 minutes or until chicken juices run clear when the thickest part is cut (170°F). Remove the chicken from the skillet.
  • Gently mix fettuccine into sauce in skillet until well coated. Place chicken on top of the fettuccine and garnish with fresh cilantro before serving.
