Whip up a quick and flavorful ginger peanut butter dip for veggies - perfect make-ahead appetizer in 15 minutes!
Ingredients:
  • 2 teaspoons olive or vegetable oil
  • 8 medium green onions, sliced ( 1/2 cup)
  • 2 teaspoons finely chopped gingerroot
  • 2 cloves garlic, finely chopped
  • 1/2 cup peanut butter
  • 1/2 cup chicken broth
  • 1 tablespoon packed brown sugar
  • 1/4 to 1/2 teaspoon ground red pepper (cayenne)
  • 1 package (3 ounces) cream cheese, softened
  • Assorted raw vegetables and crackers, if desired
Instructions:
  • In a 10-inch skillet, heat oil over medium-high heat. Sauté onions, gingerroot, and garlic for about 2 minutes, stirring occasionally until tender.
  • Add the remaining ingredients, excluding the vegetables, and cook for approximately 2 minutes while stirring constantly until heated through.
  • Enjoy the warm dip alongside a variety of fresh vegetables.
