Elevate your green beans with a Thai-inspired ginger peanut butter dip.
Ingredients:
  • 1 lb fresh green beans, trimmed
  • 1/4 cup creamy peanut butter
  • 1 tablespoon sugar
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon crushed red pepper flakes
  • 1 piece (1 inch) gingerroot, peeled, finely chopped (2 tablespoons)
  • 1 clove garlic, finely chopped
  • Chopped peanuts, if desired
Instructions:
  • In a 3-quart saucepan, bring 6 cups of water to a boil. Add beans and cook for 4 to 6 minutes until crisp-tender. Drain and rinse with cold water. Refrigerate covered while preparing the dip.
  • Whisk together all ingredients except peanuts in a medium bowl until smooth. Refrigerate covered for at least 30 minutes to enhance flavors. Before serving, give it a stir, garnish with peanuts, and serve with beans.
