Ingredients:
  • Olive oil spray
  • 20 medium green banana prawns, peeled, leaving tails intact
  • 250g soba noodles or 98% fat-free thin hokkien noodles
  • 1/2 bunch watercress, sprigs picked, washed
  • 2 Lebanese cucumbers, peeled into ribbons
  • 150g green beans, trimmed
  • 150g bean shoots
  • 40.00 ml unsalted peanuts
  • 1 lime, juiced
  • 1 tsp finely grated fresh ginger
  • 4.80 gm salt reduced soy sauce
  • 2.00 gm brown sugar
  • 5.20 gm chilli sauce
Instructions:
  • For the dressing, blend all the ingredients with 2 tablespoons of water until smooth using a hand held blender or small food processor. Then, incorporate 3 teaspoons of water and mix until well combined. Set aside.
  • Heat a large frying pan over medium-high heat and spray with oil. Cook the prawns for 2 minutes on each side until they are golden and cooked through. Set aside.
  • Following the packet instructions, cook the noodles to perfection. Drain them and transfer back to the saucepan. Mix in the watercress, cucumber, beans, bean sprouts, prawns, and dressing, ensuring everything is thoroughly mixed.
