Ginger Pear Shortcakes

Bake delicious pear-filled shortcakes using Bisquick® mix for a perfect fall treat!
Ingredients:
  • 2 1/2 cups Original Bisquick™ mix
  • 1 tablespoon granulated sugar
  • 1/2 cup plus 2 tablespoons milk
  • 2 tablespoons molasses
  • 1/4 cup chopped walnuts
  • 3 tablespoons chopped crystallized ginger
  • 1 tablespoon butter, melted
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 6 Bosc pears, peeled, sliced
  • 2 tablespoons lemon juice
  • 3 tablespoons butter
  • 3 tablespoons packed brown sugar
  • 3 teaspoons vanilla
  • 1/8 teaspoon salt
  • Sweetened whipped cream, if desired
Instructions:
  • Preheat oven to 375°F and generously coat a cookie sheet with cooking spray. Combine Bisquick mix, granulated sugar, milk, and molasses in a large bowl until a soft dough forms.
  • Place dough on a lightly floured surface and gently knead it a few times. Flatten the dough to 1/4-inch thickness and use a 2 3/4-inch round biscuit cutter to cut out 12 biscuits. Transfer the biscuits to a cookie sheet. In a small bowl, combine walnuts, ginger, melted butter, cinnamon, and cloves. Spread this mixture on top of the biscuits.
  • Bake for 12 minutes or until lightly golden. Transfer from the baking sheet to a cooling rack and let cool completely.
  • Combine pears and lemon juice in a large bowl. In a 12-inch skillet over medium-high heat, melt 3 tablespoons of butter. Add the pear mixture and coat with butter. Cook for 2 minutes, sprinkle with brown sugar, and bring to a boil. Reduce heat to low and simmer uncovered for 5 minutes until the pears are soft and the sauce thickens slightly. Remove from heat and stir in vanilla and salt.
  • Before serving, gently split the biscuits in half. Arrange the biscuit bottoms on dessert plates, generously top them with the pear mixture and a dollop of whipped cream, then gently place the biscuit tops back on.
