Kids can help make this fun and delicious ginger nut cake.
Ingredients:
  • 300ml thickened cream
  • 125.00 ml lemon butter (see note)
  • 250g packet gingernut biscuits
  • 1 lemon, rind shredded
Instructions:
  • In a bowl, whip cream using an electric beater until soft peaks form. Incorporate lemon butter and mix until smooth.
  • Spread a generous amount of zesty lemon cream on one side of each biscuit, sandwich them together to form a log shape, and then cover the log with the remaining lemon cream for an extra burst of flavor.
  • Sprinkle shredded rind over cake, cover, and refrigerate overnight. Cut cake into diagonal slices and serve.
