Ingredients:
  • 300 g sirloin steak (ideally 1.5cm thick)
  • 4 cm piece of ginger
  • 1 tablespoon miso paste
  • 2 teaspoons runny honey
  • 2 pak choi (250g)
Instructions:
  • Remove the fat from the sirloin, thinly slice the fat, and place it in a cold non-stick pan. Cook on medium-high heat until crispy. Peel and cut the ginger into matchsticks, add to the pan and crisp up. Remove any sinew from the steak, then dice it into 3cm pieces. Coat the steak with miso. Set aside the crispy fat and ginger. Add the steak to the pan. Cook for 4 minutes, tossing regularly. Drizzle with honey and 1 tablespoon of red wine vinegar. Toss for 1 more minute. Halve the pak choi and blanch in boiling water for 1 minute. Drain. Serve the steak over the pak choi, topped with the crispy bits.
