Indulgent cake with decadent caramel icing – a sweet and spicy delight!
Ingredients:
  • 125g butter, chopped
  • 230g golden syrup
  • 70g brown sugar
  • 300g self-raising flour
  • 15.00 gm ground ginger
  • 5.00 gm ground cinnamon
  • 1.25 gm ground nutmeg
  • 1/2 tsp ground cloves
  • 2 Free Range Eggs
  • 125ml buttermilk
  • 110g brown sugar
  • 40.40 gm thickened cream
  • 110g icing sugar mixture
Instructions:
  • Preheat your oven to 180C. Grease and line a 10cm x 21cm loaf pan for easy release of your baked creation.
  • In a saucepan over low heat, combine butter, golden syrup, and sugar. Stir constantly for 2-3 minutes until the butter melts and the mixture is smooth. Allow it to cool before using.
  • In a bowl, mix together flour, ginger, cinnamon, nutmeg, and cloves. Stir in the eggs, buttermilk, and melted butter until combined. Pour the batter into the prepared pan and level the top.
  • Bake in the oven for 40-45 minutes or until a skewer inserted in the center comes out clean. Allow it to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • For the caramel icing, melt together sugar, butter, and cream in a saucepan over low heat. Stir until butter melts and sugar dissolves, about 3 mins. Increase heat to medium and bring to a boil. Cook until slightly thickened, about 2 mins. Remove from heat and cool for 10 mins. Stir in icing sugar and let it cool completely for 30 mins.
  • Transfer the ginger cake onto a beautiful serving plate. Generously spread the luscious caramel icing on top. Slice and indulge in each decadent piece.
