Revamp pork roast with a speedy 25-minute twist!
Ingredients:
  • 1 tablespoon butter or margarine
  • 1 pork tenderloin (1 lb), cut into 1/2-inch slices
  • 1/4 teaspoon salt
  • 1 large peach, peeled, sliced
  • 2 tablespoons packed brown sugar
  • 1 teaspoon grated gingerroot
  • 2/3 cup chicken broth
  • 2 teaspoons cornstarch
Instructions:
  • In a 10-inch skillet over medium-high heat, melt butter until sizzling. Season pork with salt and sear for about 4 minutes, flipping once, until beautifully browned.
  • Add juicy peach slices, aromatic brown sugar, and fresh gingerroot to the mixture. Let it simmer for 2 minutes, gently stirring occasionally, until the peaches are soft and tender.
  • In a small bowl, combine broth and cornstarch, then stir into the pork and peach mixture. Lower the heat to medium-low and cook for 2 minutes, stirring occasionally, until thickened.
