Spiced molasses-coated cereal with gingersnap cookies and white chocolate drizzle - a festive holiday treat.
Ingredients:
  • 6 cups Rice Chex™ or Corn Chex™ cereal
  • 1/4 cup butter
  • 2 tablespoons packed brown sugar
  • 1 tablespoon mild molasses
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 12 gingersnap cookies, broken into quarters (from 16-oz box)
  • 1/2 cup white vanilla baking chips
Instructions:
  • Cover the rimmed cookie sheet with waxed paper, then transfer the cereal to a large microwave-safe bowl.
  • Microwave a flavorful mixture of butter, brown sugar, molasses, cinnamon, ginger, and cloves in a small microwavable bowl on High for 1 to 1 1/2 minutes. Don't forget to give it a good stir after 1 minute to ensure the sugar is fully dissolved.
  • Drizzle the mixture over the cereal and toss until fully combined. Microwave on High, stirring every minute, for 3 to 4 minutes until the cereal is evenly coated and glossy. Transfer to a cookie sheet to cool, then mix in the cookie pieces.
  • Microwave white vanilla baking chips in a small microwavable bowl on Medium (50%) for 1 to 2 minutes, stirring after 1 minute, until melted and smooth. Transfer the melted chips to a small resealable food-storage plastic bag and cut off a small corner. Drizzle the melted chips onto the cereal mixture, then refrigerate for about 15 minutes until the drizzle is set.
  • Gently separate; place in a spacious serving dish.
