Bake festive gingerbread cookies with creamy frosting, sweetened with stevia, for your holiday gathering.
Ingredients:
  • 2.25 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 0.5 teaspoon fine sea salt
  • 0.5 teaspoon ground allspice
  • 0.25 teaspoon grated nutmeg
  • 0.25 teaspoon ground cloves
  • 0.5 cup packed brown sugar
  • 0.5 cup Stevia In The Raw® Bakers Bag
  • 0.33333334326744 cup unsulfured molasses
  • 0.25 cup applesauce
  • 1 (1 inch) piece fresh ginger, peeled and grated
  • 1 large egg
  • 1 (4 ounce) package cold cream cheese, cubed
  • 0.5 stick unsalted butter, softened
  • 0.25 cup powdered sugar, sifted
  • 0.25 cup Stevia In The Raw® Bakers Bag
  • 0.5 teaspoon vanilla
Instructions:
  • Combine flour with a blend of fragrant spices such as cinnamon, allspice, nutmeg, and cloves in a medium bowl, whisking in baking soda and salt.
  • Combine brown sugar, stevia, molasses, applesauce, ginger, and egg in a large bowl. Gently mix in dry ingredients until just combined. Chill in the fridge for at least 1 hour before using.
  • Preheat your oven to a toasty 350 degrees F and perfectly line a large baking sheet with parchment paper.
  • Scoop dough with a tablespoon and roll into balls. Place on baking sheet 1 inch apart. Gently flatten cookies with your palm.
  • Bake for 12 to 15 minutes until puffy and set, then allow to cool completely.
  • In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, beat cream cheese until very smooth. Gradually add butter, then mix in powdered sugar, stevia, and vanilla until smooth.
  • Spread a generous layer of frosting on the cookies using a small offset spatula.
