Gingerbread Cookies with Orange Buttercream Frosting

Soft and cakey gingerbread cookies topped with sweet orange buttercream frosting.
Ingredients:
  • 1 cup butter
  • 1 cup white sugar
  • 1 cup molasses
  • 1 egg
  • 1 cup buttermilk
  • 3 teaspoons baking soda, divided
  • 1 teaspoon vinegar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 4 cups all-purpose flour, or more as needed
  • 3 cups powdered sugar, or more as needed
  • 1 cup butter, softened
  • 2 oranges, zested and juiced
Instructions:
  • In a spacious bowl, blend 1 cup of butter with sugar until smooth and creamy using an electric mixer. Incorporate molasses and egg until fully combined.
  • Combine buttermilk and 2 teaspoons of baking soda in a small bowl. In another small bowl, mix vinegar with the remaining 1 teaspoon of baking soda. Add the buttermilk mixture to the molasses-egg mixture, then incorporate the vinegar mixture, cinnamon, cloves, ginger, nutmeg, and salt. Mix until thoroughly combined.
  • Add the 4 cups of flour gradually, 1 cup at a time, while stirring until the dough forms a ball. Shape the dough into a ball, wrap it in plastic wrap, and chill in the refrigerator for about 30 minutes.
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • Roll out the chilled dough on a floured surface to 1/2-inch thickness. Use your favorite cookie cutters to cut out shapes and transfer them to ungreased cookie sheets.
  • Bake in the preheated oven until edges turn golden, approximately 10 minutes. Allow to cool on the baking sheet for 1 minute before transferring to a wire rack to cool further, for an additional 8 to 10 minutes.
  • Once the cookies have cooled, combine 3 cups of powdered sugar, softened butter, orange zest, and 1/3 cup of orange juice in a bowl. You can either dispose of any extra orange juice or use it for something else. Use an electric mixer to beat the frosting ingredients until the consistency resembles fondant or modeling dough, adding extra powdered sugar as needed. Proceed to frost the cookies.
