Make personalized gingerbread people to spread holiday cheer.
Ingredients:
  • 75g butter, chopped
  • 118.80 gm firmly packed brown sugar
  • 221.10 gm golden syrup
  • 750.00 ml plain flour
  • 99.00 gm self-raising flour
  • 1.25 gm bicarbonate of soda
  • 5.00 gm ground ginger
  • 2.50 gm ground cinnamon
  • Butterfly sprinkles, to decorate
  • Silver cachous, to decorate
  • Coloured sugar, to decorate
  • 2 egg whites
  • 450.00 gm pure icing sugar, sifted
  • 5.30 gm lemon juice
  • Food colouring (Pink, blue and yellow)
Instructions:
  • In a saucepan over low heat, combine butter, sugar, and syrup. Stir and cook for 10 minutes or until sugar is dissolved. Remove from heat and transfer the mixture to a large bowl. Let it cool for 20 minutes.
  • Combine flours, bicarbonate of soda, ginger, and cinnamon by sifting them together. Mix eggs into the butter mixture until just combined. Add the flour mixture and stir until a dough forms. Transfer the dough onto a lightly floured surface and gently knead it into 2 discs. Cover with plastic wrap and refrigerate for 1 hour until firm.
  • Preheat your oven to 180C/160C fan-forced. Line 3 baking trays with baking paper. Roll out the dough between 2 sheets of baking paper until it's 5mm thick. Cut out 16 gingerbread man shapes using an 11cm cutter.
  • Arrange the shapes on the baking trays. Use the picture as inspiration to shape the gingerbread men's arms and legs into various poses. Bake one tray at a time for 12 minutes, or until they are lightly browned and just firm. Allow them to cool on the trays.
  • Prepare royal icing: Whip egg white in a bowl until frothy. Slowly incorporate icing sugar, whisking until mixture is smooth. Add lemon juice and combine. Set aside half of the icing. Divide the rest into 3 portions and dye one pink, one blue, and leave one yellow. The reserved icing stays white. Transfer each colored icing into separate bags, then snip off a 2mm corner of each bag for decorating.
  • Pipe icing onto gingerbread cookies to decorate, then sprinkle with colored sugar and adorn with silver cachous and butterfly sprinkles. Lastly, use a small amount of icing to secure the extra gingerbread shapes to the family.
