Festive Christmas gingerbread stars with a touch of sweet and spice!
Ingredients:
  • 125g butter
  • 110g brown sugar
  • 175g golden syrup
  • 1 Free Range Egg yolk
  • 375g plain flour
  • 10.00 gm ground ginger
  • 2.50 gm ground cinnamon
  • 1/2 tsp ground cloves
  • 1.25 gm ground nutmeg
  • 1/2 quantity royal icing (see notes)
Instructions:
  • Preheat the oven to 180C and place baking paper on 2 trays.
  • Allow the electric mixer to work its magic on the butter, sugar, and golden syrup until the mixture turns pale and creamy. Introduce the egg yolk and continue mixing until fully combined. Add in the flour, ginger, cinnamon, cloves, and nutmeg, and gently stir everything together. Transfer the dough to a lightly floured surface and knead it until smooth.
  • Divide the dough in half. Roll out one portion on a lightly floured surface into a 5mm-thick disc. Use star cutters in sizes of 7cm, 4cm, and 2cm to cut out stars from the dough. Transfer the stars to lined trays. Bake at 350°F, switching trays halfway, for 10-12 minutes or until lightly golden. Let cool on trays. Repeat with the rest of the dough. Put royal icing in a piping bag with a 1mm plain nozzle and pipe onto the biscuits. Let the icing set before serving.
