Gingerbread gift boxes

Fun and festive gingerbread creation, perfect for gifting!
Ingredients:
  • 100g butter, chopped
  • 200g (1 cup) brown sugar, firmly packed
  • 250ml (1 cup) honey
  • 825g (5 1/2 cups) plain flour, sifted
  • 25.00 gm ground ginger
  • 7.50 gm mixed spice
  • 2.50 gm bicarbonate of soda
  • 2 eggs, lightly whisked
  • 200g pkt mixed boiled lollies
  • 375g pkt white chocolate melts, melted
  • 2 egg whites
  • 300g (2 cups) pure icing sugar
  • 5.30 gm lemon juice
Instructions:
  • Combine the butter, sugar, and honey in a small saucepan and gently stir over low heat until the butter melts and the sugar dissolves. Let it sit for 10 minutes to cool slightly.
  • In a large bowl, mix together flour, ginger, mixed spice, and bicarbonate of soda. Add the butter mixture and egg, stirring until thoroughly combined.
  • Transfer the dough onto a generously floured surface and knead until it feels smooth. Form it into a disc shape. Wrap the dough with plastic wrap and allow it to chill in the fridge for 1 hour.
  • 1. Preheat your oven to 180C/160C fan forced and line 2 baking trays with baking paper. 2. Divide the dough in half. Roll out one portion on a floured surface until 5-6mm thick. 3. Cut two 10 x 10cm base squares and eight 8 x 10.5cm side panels. 4. Use a picture as a guide to cut 4 ribbon holes on 4 side panels and 2 ribbon holes on the remaining side panels. 5. Place the pieces on the prepared trays and bake for 12-15 minutes or until golden. 6. Let them cool on the trays for 5 minutes before transferring to a wire rack to cool completely.
  • Divide the lollipops by colors and place each color in separate sealable plastic bags. Wrap one bag in a tea towel and use a rolling pin to crush them finely. Repeat the process with the other colors.
  • Roll out the remaining pastry on a floured surface until 5-6mm thick. Cut out star shapes using an 8cm cutter and place 6-8 on each lined tray.
  • Cut out star shapes in the center of each biscuit using a 4cm cutter. Transfer the smaller stars to trays and bake for 5 minutes. Fill the hole in the larger biscuits with crushed lollies, then bake for 6-7 minutes until the biscuits are golden and the lollies are melted. Allow to cool on trays before repeating the process with the remaining dough and lollies.
  • Transfer the luscious melted chocolate into a sealable plastic bag, then snip off a small corner to create a makeshift piping bag.
  • Pipe chocolate along one short side edge of one box side panel, attach another side panel and hold for a few minutes to set. Trim edges of one base square to straighten them, attach side panels to the base square with chocolate. Repeat for the remaining side panels. Allow to set then assemble a second gift box. Lastly, thread the ribbon through the holes to decorate.
  • Whisk egg whites until frothy, then mix in powdered sugar and fresh lemon juice.
  • Transfer the icing into a piping bag fitted with a 3mm nozzle. Use it to beautifully decorate the boxes and stars. Let them rest until the icing firms up, then proceed to fill the boxes with the star biscuits.
