Frosted gingerbread slab

Gift this frosted gingerbread slab to Christmas Day hosts or divide into shareable packages.
Ingredients:
  • 125g butter, chopped
  • 180.00 gm dark brown sugar
  • 166.25 gm treacle
  • 2.50 gm bicarbonate of soda
  • 1 egg, lightly beaten
  • 500.00 ml plain flour
  • 10.00 gm ground ginger
  • 1 tsp ground allspice
  • Christmas sprinkles, to decorate
  • 600.00 gm icing sugar mixture
  • 100g butter, softened
  • 41.20 gm milk
  • 42.00 gm lemon juice
Instructions:
  • In a saucepan over medium-low heat, combine butter, sugar, and treacle. Cook and stir occasionally for 5 minutes until the mixture is melted and smooth. Bring to a boil, then remove from heat. Stir in bicarbonate of soda and let it stand for 10 minutes to cool.
  • Preheat the oven to 180C/160C fan-forced, then generously grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, making sure to extend the paper 5cm above the edges of the pan on all sides.
  • Pour the treacle mixture into a large heatproof bowl, then stir in the egg until combined. Add the flour, ginger, and allspice by sifting them over the mixture. Stir until everything is well combined. Spoon the mixture into the prepared pan, ensuring it's spread evenly. Bake for 20 to 25 minutes until it's just firm to the touch. Let it cool completely in the pan.
  • Prepare Lemon Frosting: In a large bowl, sift icing sugar, then add butter, milk, and lemon juice. Mix with a wooden spoon for 1 minute until the mixture is thick and creamy. Spread the frosting over the chilled slice, decorate with sprinkles, and let it sit for 20 minutes to slightly firm up. Cut into squares and serve.
