Enhance cake with flat beer for rich flavor and tender crumb, topped with irresistible crumble. A crowd-pleaser!
Ingredients:
  • 1 cup caster (superfine) sugar
  • 6.5 tablespoons unsalted butter, softened
  • 1 large egg
  • 2 cups self-rising flour
  • 1 teaspoon vanilla extract
  • 1 pinch ground nutmeg
  • 1 cup flat beer
  • 1 cup all-purpose flour
  • 0.75 cup caster (superfine) sugar
  • 6.5 tablespoons unsalted butter, melted
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line a 9-inch square cake pan with parchment paper.
  • In a large bowl, mix superfine sugar and butter until pale and creamy using an electric mixer. Incorporate the egg until well combined. Sift in self-rising flour and gently stir. Add vanilla extract and nutmeg, followed by beer, stirring until fully combined. Pour the batter into the prepared pan.
  • Combine flour, sugar, and melted butter for topping until a crumbly mixture forms. Sprinkle over the cake batter.
  • Bake in the preheated oven for about 40 minutes until a toothpick inserted into the center comes out clean and the crumble topping is golden brown.
