Orange and gingerbread spiced whole wheat pizzelle - perfect for holiday cookie platters.
Ingredients:
  • 4 cups whole wheat flour
  • 4 teaspoons baking powder
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon ground black pepper
  • 1 cup butter
  • 0.5 cup brown sugar
  • 0.25 cup molasses
  • 1 teaspoon grated orange zest
  • 6 medium eggs
Instructions:
  • Preheat the pizzelle baker following the manufacturer's guidelines.
  • Combine whole wheat flour with baking powder, cinnamon, ginger, allspice, cloves, and black pepper in a large bowl.
  • In a large saucepan over medium heat, melt butter. Remove from heat and stir in white sugar, brown sugar, molasses, and orange zest until well-combined. Add half of the flour mixture and mix until smooth. Incorporate the eggs until smooth, and then add the remaining flour mixture, stirring until the batter is smooth.
  • Using a spoon, dollop batter onto the hot pizzelle maker. Cook until golden brown, approximately 1 1/2 minutes.
