Spicy whoopie pies with cinnamon, ginger, and molasses, filled with creamy frosting for a delightful treat.
Ingredients:
  • 10 ounces all-purpose flour
  • 0.5 cup dark molasses
  • 2.5 teaspoons ground ginger, or more to taste
  • 1.25 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 0.75 teaspoon salt
  • 0.33333334326744 cup vegetable oil
  • 1 egg, beaten
  • 0.33333334326744 cup boiling water
  • Filling:
  • 2.5 cups confectioners' sugar
  • 1 (8 ounce) package cream cheese, room temperature
  • 0.25 cup butter, room temperature
  • 2 teaspoons heavy whipping cream, or as needed
Instructions:
  • Preheat the oven to a cozy 350 degrees F (175 degrees C) and prepare a baking sheet with parchment paper or a silicone baking mat.
  • In a large bowl, mix together flour, white sugar, molasses, ginger, baking soda, cinnamon, and salt. Add vegetable oil and egg, then pour in boiling water and whisk until smooth.
  • Use a 1-ounce cookie scoop to place dough in balls on a baking sheet lined with parchment paper, ensuring they are about 1 inch apart.
  • Bake in the preheated oven until puffed and golden, approximately 12 minutes. Let cool on the pan for 5 minutes, then transfer to a rack to cool completely.
  • In the bowl of a stand mixer, combine confectioners' sugar, cream cheese, butter, cream, and vanilla extract on low speed until smooth. Increase the speed to high and beat until the mixture is light and fluffy.
  • Spread a generous amount of filling on one cookie, making sure it's evenly distributed, then sandwich it with another cookie of the same size. Repeat this step with the rest of the cookies. Allow the assembled cookies to chill in the fridge for 30 minutes.
