Homemade gingernuts with the perfect snap and chewy texture, a delicious twist on the classic store-bought version.
Ingredients:
  • 250g butter
  • 200g (1 cup, firmly packed) soft brown sugar
  • 250mls (1 cup) golden syrup
  • 7.50 gm ground ginger
  • 2.50 gm ground cinnamon
  • 2.50 gm bicarbonate of soda
  • 20.00 gm boiling water
  • 450g (3 cups) plain flour, sifted
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays with non-stick baking paper.
  • In a large saucepan, mix together butter, brown sugar, golden syrup, ginger, and cinnamon. Stir over medium heat until fully combined. Heat, stirring often, until almost boiling, then remove from heat.
  • Transfer the butter mixture into a spacious bowl and let it cool for 10 minutes.
  • Combine the bicarbonate of soda with boiling water and mix into the butter mixture. Add the plain flour and stir until fully incorporated using a wooden spoon.
  • Spoon the mixture onto the lined baking trays using a teaspoon to form 3cm rounds, ensuring enough space for spreading.
  • Bake until medium golden brown, then cool on trays. Repeat with remaining mixture and store in an airtight container.
