Tender glazed carrots and parsnips in a citrusy orange reduction, ideal for festive gatherings.
Ingredients:
  • 0.25 cup butter
  • 4 large carrots, cut into 3-inch x 1/2-inch pieces
  • 4 large parsnips, cut into 3-inch x 1/2-inch pieces
  • 0.75 cup orange juice
  • 0.75 cup chicken stock
  • 2 tablespoons lemon juice
  • 3 tablespoons chopped fresh chives
Instructions:
  • Heat butter in a spacious skillet over medium heat until melted.
  • Sauté carrots and parsnips in butter until edges turn golden brown, 8 to 10 minutes.
  • Combine vibrant orange juice, flavorful chicken stock, zesty lemon juice, a pinch of salt, and a sprinkle of black pepper with the sweet carrots and earthy parsnips. Bring to a boil, then simmer covered on low heat until the liquid transforms into a luscious syrup, stirring occasionally, for about 10 minutes.
  • Adjust seasoning to taste with additional salt and black pepper if desired, then garnish with freshly chopped chives.
