Irresistible sweet and spicy chicken that's finger-licking good.
Ingredients:
  • 349.13 gm light soy sauce
  • 42.00 gm dark soy sauce
  • 90.00 gm firmly packed brown sugar
  • 5 star anise
  • 2 cinnamon sticks
  • 125.00 ml Chinese rice wine (or sherry)
  • 4cm piece fresh ginger, peeled, cut into matchsticks
  • 6 garlic cloves, roughly chopped
  • 3kg chicken pieces on the bone (see note)
Instructions:
  • In a large ceramic bowl, mix together soy sauces, sugar, star anise, cinnamon, rice wine, ginger, and garlic. Add chicken and toss to ensure the meat is coated. Cover and refrigerate overnight.
  • Preheat your oven to 200°C. Cover a baking dish with baking paper. Arrange the chicken in a single layer in the dish. Roast, basting regularly, for 50 to 60 minutes until beautifully golden and fully cooked. Serve and enjoy!
