Include crispy mandarin-glazed chicken on your Chinese New Year spread for a beloved family dish.
Ingredients:
  • 42.00 gm light soy sauce
  • 1.7kg whole chicken
  • 2 mandarins
  • 45g (1/4 cup, lightly packed) brown sugar
  • 1/2 tsp Chinese five spice
  • Pinch white pepper
  • 1 green shallot, trimmed, halved
  • 1cm x 4cm piece peeled ginger, halved
  • 1 star anise
  • 500ml (2 cups) water
Instructions:
  • Thoroughly clean the chicken inside and out, then dry it with paper towels. Refrigerate the chicken uncovered overnight to achieve crispy skin.
  • - Preheat the oven to 200°C/180°C fan forced. - Put a wire rack in a large roasting pan. - Zest half of 1 mandarin using a zester. Peel and coarsely chop the skin of the second half. - Juice the mandarins to get 1⁄3 cup of juice. - Combine the juice and zest in a small saucepan with sugar, soy sauce, Chinese five spice, and pepper. - Place the chopped mandarin skin inside the chicken cavity along with the shallot, ginger, and star anise.
  • Secure the chicken legs with unwaxed kitchen string and arrange the chicken on a rack in a pan. Season with salt, add water to the pan, and roast for 30 minutes.
  • Simmer the mandarin juice mixture until thickened, then allow it to cool slightly.
  • Lower oven temperature to 180°C/160°C fan forced. Brush the chicken with a quarter of the mandarin juice mixture. Roast for 10 minutes. Baste every 10 minutes while roasting for an additional 40 minutes or until chicken is fully cooked. Allow to rest for 10 minutes, then carve.
