Succulent hot kabobs with broiled chicken and veggies - a perfect appetizer!
Ingredients:
  • 1/2 lb boneless skinless chicken breast halves
  • 3 tablespoons reduced-calorie maple-flavored syrup
  • 2 tablespoons lemon juice
  • 1 tablespoon butter or margarine, melted
  • 1 1/2 teaspoons chopped fresh or 1/2 teaspoon ground sage leaves
  • 1 teaspoon grated lemon peel
  • 1/4 teaspoon pepper
  • 1 medium bell pepper, cut into 16 pieces
  • 1 medium yellow summer squash, cut lengthwise in half, then cut crosswise into 16 pieces
Instructions:
  • Trim excess fat from chicken. Cut chicken into 24 pieces. Combine all other ingredients in a large glass or plastic bowl, except for the bell pepper and squash. Add in the chicken, bell pepper, and squash. Cover and refrigerate for at least 4 hours, but no more than 24 hours.
  • Preheat the oven to broil. Skewer the chicken, bell pepper, and squash onto 8-inch skewers. Arrange on a broiler pan rack and broil 4 inches from the heat for 2-3 minutes. Flip the skewers and broil for an additional 2-3 minutes until the chicken is cooked through.
