Glazed Chicken over Couscous Pilaf

Wholesome couscous pilaf with juicy chicken, citrusy glaze, ready in 30 minutes for a hassle-free dinner.
Ingredients:
  • 1/2 cup frozen sweet peas (from 9 oz box)
  • 3/4 cup water
  • 1/8 teaspoon ground ginger
  • 1/2 cup uncooked couscous
  • 2 tablespoons orange juice
  • 1 tablespoon apricot preserves or honey
  • 1/2 teaspoon spicy brown mustard
  • 2 boneless skinless chicken breast halves
Instructions:
  • In a 1-quart saucepan, combine peas, water, salt, and ginger. Bring to a boil over high heat, then reduce to medium-low heat, cover, and simmer for 2 minutes. Remove from heat, stir in couscous, cover, and let stand for 5 minutes before serving.
  • Preheat oven to broil. Combine orange juice, preserves, and mustard in a small bowl. Transfer half of the mixture (around 2 tablespoons) to a separate dish for topping.
  • Lay the chicken on the rack in the broiler pan and generously brush it with half of the delicious orange juice glaze.
  • Broil the chicken with the tops about 4 inches from the heat for 8 to 10 minutes. Turn and brush with glaze after 5 minutes. Cook until the chicken juices run clear when the thickest pieces are cut. Discard any leftover glaze.
  • Gently fluff pilaf with a fork and divide onto plates. Arrange chicken on top and drizzle with the reserved orange juice mixture.
