Honey balsamic glazed chicken thighs served over egg noodles.
Ingredients:
  • 1.5 teaspoons dried thyme
  • 4 skinless, boneless chicken thighs
  • 1 (8 ounce) package sliced fresh mushrooms
  • 4 shallots, chopped
  • 0.5 cup chicken broth
  • 0.25 cup balsamic vinegar
  • 1 tablespoon honey
Instructions:
  • Season chicken thighs with thyme and black pepper. Heat a nonstick pan over medium-high heat coated with cooking spray. Cook chicken thighs on both sides until fully cooked, about 10-15 minutes. Ensure not to overcook. Set aside to keep warm.
  • Sauté mushrooms and shallots in the pan until slightly browned. Pour in a splash of broth and cook for 3 to 5 minutes. Stir in remaining broth, balsamic vinegar, and honey. Simmer until slightly thickened for 1 to 2 minutes. Add chicken back to the pan and heat through for another 1 to 2 minutes.
