Tasty honey-balsamic grilled chicken ready in just 1 hour. Perfect on its own or atop a fresh salad.
Ingredients:
  • 1 cup balsamic vinegar
  • 0.5 cup olive oil
  • 0.5 cup honey
  • 2 tablespoons Dijon mustard
  • 4 cloves garlic, minced
  • 2 teaspoons dried basil
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper
  • 4 boneless, skinless chicken breasts
Instructions:
  • Combine balsamic vinegar, olive oil, honey, Dijon mustard, garlic, basil, salt, and pepper in a small bowl and whisk until well blended.
  • Place chicken in a resealable plastic bag and mix with half of the marinade. Let the chicken marinate in the refrigerator for at least 1 hour, or preferably overnight. Set aside the remaining marinade for grilling later.
  • Heat up your outdoor grill to medium-high heat, around 400 degrees F (200 degrees C), and lightly oil the grate.
  • Discard the used marinade and take out the chicken.
  • Place the chicken on the sizzling grill and brush it generously with the reserved marinade. Reduce heat to medium and grill until the chicken is cooked through and the juices run clear, about 6 to 8 minutes per side. Remember to brush with marinade each time you flip the chicken. Ensure the chicken reaches an internal temperature of 165°F (74°C). Remove the chicken from the grill, cover, and let it rest for 5 to 10 minutes before serving.
