Tangy balsamic marinade with honey, herbs, and olive oil elevates bone-in chicken thighs for a flavorful and simple meal.
Ingredients:
  • 0.25 cup balsamic vinegar
  • 0.25 cup olive oil
  • 0.25 cup honey
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 2 pounds bone-in chicken thighs, or more to taste
Instructions:
  • Whisk balsamic vinegar, olive oil, honey, thyme, and rosemary until well blended; transfer to a plastic bag for marinating.
  • Season the chicken thighs with a generous amount of salt and freshly ground black pepper. Place them in a plastic bag with the marinade, remove any excess air, and seal the bag tightly. Allow the chicken to marinate in the refrigerator for 2 to 8 hours for maximum flavor infusion.
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • Transfer the flavorful chicken and marinade into a baking dish.
  • Roast chicken in a hot oven until fully cooked and juices run clear, about 35 to 40 minutes. Check with an instant-read thermometer for doneness - it should read 165 degrees F (74 degrees C) when inserted near the bone.
